L'atelier de Sauveterre has become Le Couteau de Sauveterre.
The firm created by Guy Vialis 20 years ago was acquired by Christian Valat, owner of the Coutellerie Laguiole Traditions in Espalion.
This workshop had revived the main activity in the village from 13th to 17th centuries: knife making.
Today, you can come in the shop with a look out onto the workshop where the cutlers make in front of you unique models and special sets with various materials, from mammoth to latest high tech composites.
Sober and pure, its line catapults it into to the 21st century.
